Energy Bites

I am sure you've seen these floating around. I wanted to give them a try since I love everything in them. They are healthy and great to have in the fridge as a grab and go snack. Bonus: My kids love them. You know kids are the toughest critics so if they like them, they are a keeper.


Ingredients
1 C. oats
1/3 C. toasted coconut flakes
1/2 C. peanut butter
1/2 C. ground flaxseed
1/2 C. mini semisweet chocolate chips
1/2 C. honey
1 Tbsp. Chia seeds
1 tsp. vanilla extract

Directions
  • Mix all ingredients together with a mixer or wooden spoon. 
  • Let chill in the fridge for 30 minutes.
  • Roll into whatever size balls you want.
  • Store in an air-tight container in the fridge for up to 1 week.
