Cool Off With Ice Cream

Is it hot hot hot where you live? Oh my goodness, these triple digits just make it miserable to go outside. Even early morning or late at night it's still high 80's on some days. I can't even wear foundation on my face because it just melts off. If you are in a cooler area, count your lucky stars. What better way to cool off than with some ice cold treats from Unilever? They have 6 tasty ice cream brands that include Fruttare, Popsicle, Breyers, Magnum Ice Cream , Klondikeand Good Humor.

-Fruttare- Emma and my husband like these a lot. They come in two varieties, fruit and milk and fruit and juice. We tried the Strawberry bars and they were so smooth.
-Klondike- These come in so many flavors, but we chose the Heath bars. My husband loves these. And my girls tried them and really enjoyed them, too. Uh-oh! Super easy to get addicted to!
-Breyers- We went with the Thin Mint Breyers Blasts. Hannah loves Thin Mint Girl Scout Cookies so I knew she'd like this ice cream. It has bits of Thin Mint Cookies in it.

-Good Humor- It seems like Good Humor has been around since forever. We loved the Reese's bars which have peanut butter ice cream inside a crunchy chocolate shell. The best part is the pieces of Reese's Peanut Butter Cups inside. Oh man.
-Popsicle- These were probably my kids' favorite of all. They loved the Jolly Rancher flavors! What kid doesn't love a Popsicle of some sort?

-MAGNUM Ice Cream- We tried the MAGNUM Mini Double Caramel Bars. They have silky vanilla bean ice cream, luscious caramel sauce and rich Belgian milk chocolate. I loved these the most. Super decadent and the caramel inside just melted on my tongue.

Rush-Hour Recipes Review & Giveaway

Gooseberry Patch has done it again. They've just come out with a brand new cookbook that couldn't be any more of a lifesaver. Or dinner saver.

Rush-Hour Recipes is filled with more than 230 dinner recipes that are sure to please your family and friends. With categories like 5-Ingredient Favorites, One-Dish Dinners, Slow Cookers to the Rescue, Soup's On!, Make-a-Meal Sides, and Speedy Potluck & Party Foods you will never have to look much further than your pantry for the ingredients. Many of the dishes can be prepared in 30 minutes or less! That's a winner in my kitchen. You could also use it for lunch. I rarely cook lunch. We usually have leftovers or a sandwich or something quick like that. Today, however, I made Chicken Noodle Bowl and let me say, it came together in a snap.

8 oz. pkg. linguine pasta

3 c. frozen broccoli cuts or florets

2 carrots, peeled and sliced

2 tsp. oil

1 lb. boneless skinless chicken breasts, cut into strips or chunks

1/2 c. zesty Italian salad dressing

1/3 c. teriyaki sauce

1 tsp. ground ginger

1 can water chestnuts (I added these)

Cook pasta according to package directions. Add broccoli and carrots to the cooking water the last 2 minutes of cooking time. Drain pasta mixture. Meanwhile, heat oil in a large skillet over medium heat. Add chicken; cook until golden on all sides, stirring occasionally. Stir in remaining ingredients; cook until sauce thickens. Add pasta mixture to skillet. Stir until coated with sauce. Serve in individual bowls. Makes 4 servings.

In the very back of the book there are a few dessert recipes. You just know I had to try one. I chose the Better Than Brownies. They are pretty scrumptious. They remind me of Betty Crocker's Warm Delights. Very light and airy and melt-in-your-mouth good!

3.4 oz. pkg. cook & serve chocolate pudding mix

2 c. milk

18.5 oz. box chocolate cake mix

1 c. semi-sweet chocolate chips

1 c. chopped nuts (I left these out)

Prepare dry pudding mix with milk according to package directions. Cook until slightly thickened. Remove from heat. Stir in dry cake mix. Spread batter into a greased 9x13 baking pan; sprinkle with chocolate chips and nuts. Bake at 350 degrees for 30 minutes. Cool and cut into squares. Makes about 2 dozen.
