French Dip Crescents

I recently shared these little guys over at Made From Pinterest.  These  French Dip Crescents are a cinch to put together. Keep these items on hand and there is no excuse for being too busy to cook for your family! Just add a side salad or some french fries and you are ready. If you have time try making these Baked Zucchini Fries. Yum!

Busy Day Lasagna Toss



Lasagna is one of my favorite comfort foods. When I make it, I use cottage cheese instead of Ricotta. It's just the way I've always eaten it. Once, I tried making it with Ricotta cheese and my husband didn't love it as much as he did with the cottage cheese. So I went back to using cottage cheese. Why fix something if it isn't broken and all? I am sharing this Busy Day Lasagna with you in conjunction with another Gooseberry Patch cookbook giveaway! Keep reading for the details.

But lasagna is not a fast meal to prepare. This skillet version is. While I still prefer the classic version, this is a tasty substitute for when you want and quick and easy meal.


Ingredients
1 lb. ground beef
1 C. green pepper, chopped
1/2 C. onion, chopped
3 garlic cloves, minced
26 oz. jar spaghetti sauce
1 2/3 C. water
1/4 C. Italian salad dressing (prepared not dry)
1/4 C. brown sugar (I used 1 Tbsp. and it was plenty sweet)
12 no boil lasagna noodles, uncooked (or use regular noodles and just break them up, then cook them in a pot of water and add to the beef mixture)
1/2 C. ricotta or cottage cheese
1 C. shredded mozzarella cheese

Directions
  • Brown beef in a large deep skillet over medium heat; drain.
  • Add pepper, onion, and garlic; saute until tender.
  • Stir in sauce, water, salad dressing and brown sugar. If using regular noodles, leave out the water
  • Bring to a boil.
  • Break each noodle into 4 pieces; stir into mixture.
  • Reduce heat to medium-low; cover and cook, stirring occasionally until noodles are tender, about 10-15 minutes.
  • Remove from heat.
  • Stir in ricotta or cottage cheese. 
  • Sprinkle with mozzarella cheese; cover.
  • Let stand for about 5 minutes, until cheese is melted. 
  • Serves 6.

Slow Cooked Sirloin

I am now a Taste of Home Field Editor and part of my job is to review 3 recipes a month on their site. What a hard job, let me tell you {sarcasm font here}. This recipe is so easy to throw in the slow cooker and walk away. It's great anytime of year, but in the summer when you don't want to heat up the kitchen it's perfect. Next time I am serving it over thick slices of bread, topped with mashed potatoes and then the sirloin and gravy. I can't wait to make this again.

Ingredients
1 1/2 lbs beef top sirloin steak
1 medium onion, sliced
1 medium green pepper, sliced (I left this out)
1 can (14.5 oz) beef broth
1/4 C. Worcestershire sauce
1/4 tsp. dill weed
1/4 tsp. dried thyme
1/4 tsp. ground black pepper
2 Tbsp. cornstarch 
2 Tbsp. water

Directions
  • Place onions and green peppers in the bottom of a slow cooker. 
  • Top with beef.
  • Combine the broth, Worcestershire, dill, thyme, and black pepper; pour over the beef.
  • Cover and cook on high for 3-4 hours or low 5-6 or until meat reaches desired doneness and veggies are crisp-tender.
  • Remove beef and keep warm.
  • Combine the cornstarch and water until smooth; gradually stir into cooking juices.
  • Cover and cook about 30 minutes longer or until slightly thickened. 
  • Slice the beef and return the beef to the slow cooker; heat through.
  • Serve with mashed potatoes and gravy.
