Peanut Butter Cup Smoothie



If you haven't noticed, I like Smoothies. From this Tropical Smoothie to this Pina Colada, Smoothies are a great way to get some fruits and veggies into you. Plus it's fun to trick your kids. Be honest. It is. They don't realize they are drinking something that's good for them. All they know is that it tastes amazing! This smoothie doesn't actually have peanut butter cups in it, but it sure tastes good anyway. You can use Greek yogurt like I did or you can use regular yogurt. I love Greek, it has protein.


Ingredients

1 C. 1% chocolate low-fat milk
1/2 C. vanilla low-fat frozen yogurt
2 Tbsp. peanut butter
1 (8 oz.) vanilla yogurt

Directions
  • Place all ingredients in a blender.
  • Blend until smooth.
  • Makes 3 cups.
Note: You can add a frozen sliced banana if you want.

Oatmeal Apple Bites

Now that school is back in session, I feel the need to make great snacks that my kids will love when they walk in the door. I love hearing about their day and what better way than over cookies and milk? These are healthy, too, so I don't feel bad letting my kids have another one. They are so good with the bits of apples baked into them. My son especially can't get enough of these.


Ingredients

2 egg whites
1/4 cup milk
2 tablespoons oil (coconut or olive oil is what I use)
1 teaspoon vanilla extract
2 cups quick-cooking oats
1/2 cup all-purpose flour
1/4 cup sugar
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped peeled apple


Directions
  • In a large bowl, beat the egg whites, milk, oil and vanilla. 
  • Combine the oats, flour, sugars, cinnamon, baking powder, salt and nutmeg; gradually add to egg white mixture and mix well. 
  • Stir in apple.
  • Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray.
  •  Bake at 350° for 10-12 minutes or until bottoms are lightly browned.
  •  Remove to wire racks.

Arby's Grand Turkey Club Sandwich

I can tell you right now that Arby's is one of my favorite fast food restaurants. I always order the Beef 'N Cheddar with Curly Fries. Alway. It's just what I love. I top it off with a little Horsey Sauce and I am happy. When I used to work at a bank, there was an Arby's right next door. Guess where I had lunch at least once a week? Yep. My husband is a Beef 'N Cheddar kinda guy and that is really weird. Not weird that he likes it, but weird that we both order the same thing. We have such different tastes. I can pretty much guarantee that if I like something, he won't. And vice versa.

So when I got to try their new Grand Turkey Club sandwich, I was happy. I mean how can you go wrong with freshly sliced hot roast turkey, melted Swiss cheese, pepper bacon, leaf lettuce, tomato and mayo all served up on a Harvest Wheat bun? The answer is: You can't.

And to mix it up, you can also add ham and have a Grand Turkey and Ham Club sandwich. Crazy, I know.

This sandwich tastes like it comes from a swanky deli or something. It's really that good. Not just a normal turkey sandwich, that's for sure. I loved the melted Swiss cheese gooing over the turkey and bacon. I need to go back soon and get another one because just writing about it is making me crave one!

I really hope you have an Arby's near you. You can Find an Arby’s and try this amazing sandwich out for yourself. Plus get a Beef 'N Cheddar for me, will you? Don't forget the Curly Fries. Forget about the Burger joint and get a Grand Turkey Club sandwich instead.

School is back in full swing and my kids are loving it. Emma can't get enough of Kindergarten and I tried to tell her that she is done, only 1 week is required and now she can stay home with me. She didn't fall for it. Hannah is having a blast at middle school. Good for her. I hope she continues to love it and gets to skip the drama. You think she'll be that lucky? Preston is ho-hum about school. He would rather be farming with his dad. Have your kids gone back yet?

Cheesy Garlic Breadsticks


I shared this recipe over on Made From Pinterest a couple of weeks ago. So be sure to hop over there to get the recipe. This is now one of my favorite bread stick recipes. These are so simple yet so delicious. We eat them up fast in our house. Make them along side some pasta like my favorite Red & White Pasta or with pizza. Have you ever tried Grilled Pizza? You must!
