Ah, Valentine's Day. The day of love.

But this year, I say pass. Only because my husband is gone in WY working in the oil fields on Valentine's Day. So while the rest of you are out on romantic dates or getting engaged or snuggling up to a good romantic comedy, I'll be curled up with a chick flick and Diet Coke.

I got mini boxes of chocolates to give to my kids and they'll love that so I'm happy I have them. 

Cuz I sure do love my little ones.

Chewy Molasses Cookies

Not to be confused with Gingersnaps. Those are spicier.

 I like spice. 

Nothing wrong with a little kick in your life.

These are chewy and I like chewy cookies. I'm not a fan of crunchy cookies. Not really at all. Unless they are some sort of Pepperidge Farm cookie.

Or Oreo Cookie.

That's all.

1 c. sugar

3/4 c. sour cream

1/2 c. margarine or butter, softened

1/2 c. shortening

1/2 c. molasses

1 egg

3 c. all-purpose flour

1 1/2 tsp. baking soda

1 tsp. ground cinnamon

1 tsp. ground ginger

1/2 tsp. salt

Heat oven to 375 degrees. Mix sugar, sour cream, butter, shortening, molasses* and egg in a large bowl until smooth.

 *There are different kinds of molasses. I used the Full Flavor (or dark) Brer Rabbit brand. It has the green label.

Stir in the remaining ingredients. Drop by spoonful about 2 inches apart onto an ungreased cookie sheet. Bake 9-11 minutes or until no indention remains when you touch the center. Remove from oven and sprinkle with sugar while cookies are still warm. Cool on wire rack.

Quinoa Salad with Roasted Beets, Chick Peas and Orange

Fresh, bright quinoa salad with oranges and roasted beets.

February second. We survived January, Darling. Happy Groundhog Day to you. Happy Imbolc. The dwindling of winter is at last within reach- no matter what Punxatawny Phil predicts. Six weeks is doable. After all, there is chocolate. Downton Abbey 2. And soup. And our hope-fueled New Year betterments are still on track (right?). If not, the year is young. Tomorrow is a fresh start. To celebrate, let's throw a party. My contribution? A gluten-free vegan salad that is perfect for parties.

Because throwing a party is a tad more complicated than it used to be.

There are vegans to accommodate. And newly gluten-free friends and neighbors to feed. And let's face it. Everyone is a wee bit bored by those layered taco bean dips and pork sliders. Gooey meat and cheese is so predictable. Pizza dips are so frat house.

Why not go fresh and breezy instead?

I've said it before: I'm not a fan of watching football. Or any sport, really. Except soccer. I can watch soccer. Live. Not on t.v.
