Cafe Rio Chicken


I recently ate at Costa Vida for the first time and fell in love with their Sweet Pork Salad. Then my sister-in-law told me about Cafe Rio and how good their food is. I came across this recipe from my BBF (Best Blogger Friend-yes it's such a thing, or it is now!) Holly's blog and it's so good! We ate it taco style, but you could do it as a salad as well. The most wonderful part is that it's cooked in a slow cooker. Those recipes always make me happy.



2 lbs chicken breasts
1 C. Zesty Italian dressing
1/2 Tbsp. minced garlic
1 pkt ranch dressing mix (mixed with 1/2 cup of water)*
1/2 Tbsp. chili powder
1/2 Tbsp. ground cumin

Place all ingredients in a crock pot. Cook on High 5-6 hours OR on Low 8 hours. Shred with fork and serve in salads, burritos, tacos...etc. You can also double or triple this to make extras for freezing. Then simply thaw and reheat for a lickity split meal.

*Or you could use 3 Tbsp. of the bulk Ranch dressing mix from Costco or Sam's Club.

Sweet Potato Black Bean Enchiladas


Just in case you missed it, I'm sharing one of the all-time favorite recipes here on Gluten-Free Goddess- my sweet potato black bean enchiladas smothered in salsa verde. This budget-friendly vegetarian enchilada recipe is one of those happy accidents that spring from a burst of creative inspiration. I was craving the soft and spicy comfort of enchiladas one windy spring night back in 2003, and I had none of the usual suspects on hand (no chicken, or beef, no pinto beans).

But I had one lovely mother of a sweet potato.

I had a can of organic black beans in the pantry.

Some roasted green chiles.

One lonely lime.

And your intrepid Mamacita at large thought, Hmmm. Why not?

Deliciousness ensued.

These wrapped little gems are soft and creamy and a little bit spicy- just like a certain cook, my husband would say. It's the yams, I tell him. Er, sweet potato. I can never tell the difference. In the end, it doesn't matter. What matters is how it tastes.

And Babycakes, these are so very mucho scrumptious. Seriously. I kid you not. Make a batch for a girls' night in, or laid back Sunday brunch.

Oatmeal S'mores Cookies {Totally Tasty Tuesdays}


I love recipes containing S'mores ingredients. Like this fudge. I have more recipes coming that contain these fabulous ingredients. Let's talk about these cookies. While there aren't any graham crackers in them, the oats make your mouth think there are. I love marshmallows in cookies. It just makes me happy. I figured this out after I made these but, you don't add the marshmallows until a few minutes into baking. Mine were added in the batter and once baked, melted away. Good to know for next time.

Note: I've changed the marshmallows in these cookies. Keep reading to see what I did...



1/2 c. soft butter
1/2 c. shortening
1 c. brown sugar
1/2 c. sugar
2 eggs
1 1/2 tsp. vanilla 
2 1/4 c. flour
1 tsp. salt
1 tsp. baking soda
1 c. oats
1 c. semi-sweet chocolate chips
1 c. mini marshmallows (or marshmallow bits*)

In a large mixing bowl, cream together butter, shortening, and sugars. Add the eggs. Beat in the vanilla. Add flour, salt, baking soda, oats and chocolate chips. Drop by spoonfuls onto a greased cookie sheet. Bake at 350 degrees for 9 minutes. Push some marshmallows into each cookie and continue baking 2-5 more minutes until done.

*Here are the marshmallow bits I used the second time around:


Yep! The kind used in hot cocoa mixes! Genius.


 Let them sit for a minute before removing to a wire rack.

Ka-Thon Loy Kaew (Chilled Santol in scented Syrup)



Ka-Thon Loy Kaew or Chilled Santol in scented Syrup. Is Santol is also knows as ka-thon or wild mangosteen or sandorica. It's a tropical tree that originates in southeast Asia. Santol a Thai fruit, sour and sweet. And slightly astringent. Eat a fresh fruit compote and a spicy curry can also be made ​​in syrup. By the santol boiled in syrup Time is slowly eating with ice break.

Ingredient:
  • 3 over ripe santol fruits 
  • 1 cup Sugar 
  • 2 tbsp salt 
  • 2 cups boiled water 
Preparation:
  1. Mix salt in the boiled water and leave it for cooling down. 
  2. Peel and cut the satol fruits into small pieces, then keep them in salt water for 1 hour. 
  3. Boil the mixture of sugar and water until it is thick as a syrup, then add a little bit of salt to balance the taste. 
  4. Remove the santol from the salty water and put it in the syrup for 1 hour. 
  5. Serve the santol floating in the syrup cool (from refrigerator) or with ground ice.

Tropical Fruits: Santol (Ka-Thon)


Santol is also knows as katon or wild mangosteen or sandorica. It's a tropical tree that originates in southeast Asia.

Santol or Ka-Thon in Thai is native to former Indochina and the Malaysian peninsular,  cultivated in India, Thailand, Cambodia, Laos, Myanmar, Malaysia, Borneo, Indonesia, the Moluccas, Philippines, Mauritius.  The fruits are round with some wrinkles extending a short distance from the base. Their diameter is 4 to 8 centimeters. The color is yellowish, pinkish to golden. The whitish fluffy rind contains a milky juice. This edible juicy pulp is sweet or sour and surrounds 3 to 5 brown seeds which are inedible.  Santol trees can be very high up to 45 meters tall.  Propagation of santol is by seeds, air-layering, inarching, or by budding onto self rootstocks.  Harvest by hand picking, or use a stick to twist the fruits off.   Fruits are usually eaten raw.  Cut the fruit in half and spoon out the pulp.  Santol seeds are inedible.

Bavarian Peach Jello



If you like Jello, then you'll love this. My 6-year-old son Preston is a Jello expert and says this is his favorite kind that I've made. He even likes it more than this Mandarin Orange Jello. That Jello is my favorite. This is delicious, too as I love peaches!


3 oz. package Peach Jello
1 c. boiling water
1 c. canned peaches 
1/4 c. sugar
3 oz. instant vanilla pudding mix
1 1/2 c. cold milk

Add Jello and sugar to boiling water and stir until dissolved. Drain the peaches, reserving 1/3 c. of the juice, and cut up unless you have diced peaches, which is the smart thing to do.


Mmm...
Stir juice into the jello. Chill until slightly thick. Prepare pudding with the milk. Let it sit 5 minutes until thickened. Fold into the thickened Jello. Stir in peaches. Pour into a mold or dish and chill until firm.
