Grilled Vegetable Quinoa Salad

Grilled Vegetable Quinoa Salad

Everyone loves a good old fashioned barbecue. The easy conviviality of a family backyard picnic. The smoky summer scent of charred goodies grilling. Lemonade chilling. Badminton birdies sailing. The crack of croquet balls. The last pink of daylight. Punching lids on firefly jars. But if you need to be gluten-free, or if you happen to be vegan, barbecues can be less than convivial. Those mysterious sauces (so often containing wheat-laced soy sauce). Those off-limit fluffy hot dog buns. All those meaty burgers and egg dotted salads. What's a gluten-free vegan to do? Munch on lettuce?

I've got your back.

How about a light and summery quinoa salad with grilled corn, parsley, lemon and mint, with a velvety side of smoky grilled red onion, zucchini, peppers, portobello mushrooms, asparagus and eggplant? A vegan feast. Gluten-free.

Grilled vegetables are the jewels of summer. Show stoppers, really, in their gorgeous rainbow colors. No one will feel cheated or deprived eating a bowl of these beautiful smoky-sweet veggies with lemon infused quinoa. Serve a side of hummus tahini as a cool and creamy condiment.

Grilled Vegetable Quinoa Salad

Vegans and omnivores alike will love this summery quinoa dish with smoky grilled veggies. The easiest way to grill marinated veggies is to use a grill basket. But foil also works (and solves the whole cross contamination issue for those eating gluten-free). If you don't have an outdoor grill, you can grill your veggies using a cast iron grill pan.

Ingredients:

1 large red onion, peeled, trimmed, sliced
1 large red bell pepper, cored, seeded, sliced
1 large yellow bell pepper, cored, seeded, sliced
1 medium zucchini, sliced lengthwise
1 medium yellow squash, sliced lengthwise
1 medium eggplant, trimmed, sliced
2 large portobello mushrooms, stemmed
1 pound asparagus spears, ends trimmed
1/4 cup olive oil
2 tablespoons white balsamic vinegar
2 cloves fresh garlic, crushed
1 teaspoon dried thyme
Sea salt and ground pepper, to taste
2 ears of fresh corn, corn silk removed, husks on
3 cups cooked quinoa
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh mint
Extra virgin olive oil, to taste
Juice from 1 lemon
Sea salt and ground pepper, to taste

Instructions:

In a large bowl combine the the onion, bell peppers, zucchini, yellow squash, eggplant, portobello mushrooms, and asparagus. Drizzle with olive oil and white balsamic vinegar. Add the
garlic, and thyme. Season with sea salt and ground pepper, to taste. Gently toss to coat. Cover and marinate for one hour.

Heat the grill to medium-high heat.

Grill the ears of corn separately on a rear rack, away from direct flame. The husks will get a bit blackened and smoky. This adds so much flavor. Rotate them every five minutes or so. After 10-20 minutes, when the corn is tender, remove and set aside to cool. Strip off the husks and carefully slice the kernels off the cob. Set aside.

Meanwhile, place the veggies in a grill basket, or spread out the veggies on a large sheet of foil. Add a top sheet, crimp the edges of the sheets together to make a packet. Place on the hot grill and cook until tender crisp, about 15-25 minutes, depending upon the size of your grill. Remove the veggie basket/packet to a large platter or cutting board, and set aside.

Place the cooked quinoa in a large serving bowl. Add the grilled corn, chopped fresh parsley, and mint. Drizzle with extra virgin olive oil and lemon juice. Season to taste with sea salt and ground pepper. Toss to coat.

To serve, you can either slice the grilled veggies and add them to the quinoa as a salad, or serve the simple quinoa-corn salad with big beautiful pieces of grilled veggies on the side.
Hummus tahini is a lovely condiment with grilled veggies.

Serves 6.

Lemon Infused Gluten-Free Pasta Salad with Grilled Asparagus and Herbs

Lemon Infused Pasta Salad with Fresh Herbs and Grilled Asparagus
A light, lemony vegan pasta salad. Gluten-free.

Lemon Pasta Salad for Summer

To speak about something as prosaic as pasta salad seems downright ho-hum. I mean. It's just a pasta salad. It's something I tossed together with stuff I had on hand. I hadn't planned on it. I didn't spend days contemplating the ins and outs and quirks of gluten-free brown rice penne. In fact, if I'm being unabashedly honest here I rarely think about food at all.

Until I'm hungry.

Until those familiar, nagging pangs begin gnawing their pesky little way into my consciousness, distracting me from my preferred, visual nomenclature- which rarely includes anything edible.

I daydream about paint, the plight of bees, and Clint Mansell's score for Moon. I notice the temperature of light and the curve of negative space against a jar of old spoons. I think about expectations and illusions and perceptions. I ponder where my soul is taking me, tugging at me to pay attention to my life, inviting me through dreams and the random snippets of music or ideas or theories that skitter and skate and ripple the mental stream I wade in day after day, to consider time itself- if I believe in it- sliding by in a cool constant flow of now.

I rarely eat breakfast. I often forget lunch. And dinner time always surprises me. As if each day takes figuring out all over again how to live (to paraphrase the Deadwood Zen master David Milch).

This doesn't mean I don't appreciate good food. Or that I hate to cook (well, some days I am less than enthusiastic). I loathe junk food and processed food. I can't take credit for this- it's simply the way I'm built, the way my body so pointedly rejects any easy, packaged fix.

Even before I discovered gluten intolerance and FODMAPs I knew on some instinctual level that in order to keep this body of mine healthy and strong for the here and now I have to pay it some attention. I know I have to eat. And eat consciously.

And so I find myself rummaging in the little white painted cupboard that is my pantry.

And I find a box of brown rice penne.

In the fridge I locate a fistful of spring asparagus.

One lemon.

A few sprigs of dill, marjoram, parsley and mint.

The rest is history.

Now in my belly.

Fuel for instigating thoughts of rebirth, fragility, and the particular pink that is ranunculus.

Zyliss Kitchen Gadgets Review

I always have a garden every summer. I always plant lettuce, spinach and beets among other veggies. My husband loves beet greens. That is the green tops just so you know. I put them in a saucepan, cover them with water, and boil until they are wilted. Then Lance tops them with butter, lemon juice and ground pepper. I don't care for the stuff, but I love salads. I have a hard time eating the lettuce out of my garden. Only because I have seen the earwigs that crawl on it and it just creeps me out. Even after I've washed it and there is no evidence of the bugs.

I received some fun kitchen gadgets that will hopefully help me with this phobia of mine.

The salad spinner is pretty nifty. It washes lettuce and other greens really well. And they don't go all limp after washing. The lettuce knife cuts without turning lettuce brown like metal knives do. It can also cut brownies, cakes, and bread. That's my kind of knife! The salad tongs are wonderful. I recently broke mine and these come apart to toss salads or you can clip them together and use them as tongs. The Shake 'N' Go is a help to me, especially right now. Some mornings I don't get a chance to sit down and eat breakfast. Baby Isaac has his own agenda. This Shake 'N Go lets me mix up a Slim Fast drink and at least get something in me. It can also be used to make salad dressings.

Back to the salad spinner. I have only used it for store bought lettuce so far. Once my garden is ready, I will be using it for those greens and I really hope it helps my issue with the lettuce and bugs. Plus it will remove the dirt like nobody's business.

It comes in 4 sections that fit right into each other.

And it has a pop-up lever that you push down to spin the lettuce and a stop button to...well...stop the spinning.

Potato Rolls

Since having Isaac, I haven't cooked a whole lot. It is so hard to do it when baby boy wants to be held all.the.time. Or when he thinks the second he wakes up, it's feeding time. Or when you only have 5 minutes in between feeding Isaac, laundry, showering, breathing, and feeding Isaac. It has been simple meals like grilled cheese sandwiches and tomato soup or chicken strips. I am hoping as he gets older, it will get easier.  But when I saw these rolls on a local tv show called Studio 5, I had to try them.

Oh.You.Guys.
I know everyone has their favorite recipe for rolls and they think it is the best ever.
These rolls kick those rolls' trash. No offense.
They are the best rolls ever.
I have yet to make a delicious bread that actually turns out soft and fluffy and if you threw it at a window, it wouldn't break said window.
You must try them. Sweet Basil, how I love you.
I halved the recipe and got 12 big rolls. Next time, I am making Cinnamon Rolls out of this recipe. It will be divine.
Just be sure to use potato flakes or potato pearls and not mashed potatoes. They won't turn out right.

Ingredients
3/4 c. sugar
3/4 c. butter or shortening (I used butter)
3 c. scalded milk* instructions below
1 c. potato flakes
1 Tbsp. salt
4 eggs
1 Tbsp. SAF Instant Yeast or 2 Tb Fleishmann's yeast (I used SAF)
7 c. flour
*1/3 c. additional butter, softened

Directions

  • Heat a medium sauce pan over medium heat and add the milk. Cook until the edges begin to foam and froth, but do not allow it to boil. There will be a little layer of the milk "skin" on top.
  •  Remove from heat and add the sugar, shortening or butter, potato flakes and salt.
  • Stir thoroughly and allow to cool to lukewarm.
  •  Add the yeast, stir and then add the eggs, stirring until they are mixed in.
  • Place the flour in a large bowl.
  • Pour the milk mixture in and stir until the dough has come together, but is still soft. Sometimes I only use like 6- 6 1/2 cups of flour. This is not like bread dough. It is slightly sticky dough.
  • Cover the bowl with a towel or saran wrap.
  • Let dough rise for one hour.
  •  Push down and divide dough into 3 parts.
  • Roll out one portion at a time to 1/2" thick and butter 1/2 of dough with a few pats of butter.
  •  Fold the unbuttered dough over the buttered dough and press to seal.
  • Cut into 1" wide strips.
  • Pick up one strip at a time and tie into knots.
  •  Place on lightly greased cookie sheet and cover with a towel.
  •  Let rise for 1-2 hours more or until doubled in size.
  • Bake at 350 until golden brown, 14-20 min.

Sweet Basil's Notes:

Butter can be replaced by butter flavored shortening if you're ever in a pinch.
Scalding milk does not have to be scary. Just heat on med-low heat, watch for the foamy bubbles around the sides of the pan and use a wooden spoon to occasionally touch the top of the milk to see if a slight skin has formed.
Bread making just takes practice. You may be unsure of yourself the first time or two, but this is one of those things that the more you do it the better you get.
The dough will look shaggy. Don't worry. Just place the towel over the bowl and let it rise anyway.
These can be made a day ahead, let the dough rest in the fridge, bring it back to room temp, roll it out and proceed as normal.

Karina's Gluten-Free Blueberry Flax Muffins

Gluten-Free Blueberry Flax Muffins @ Gluten-Free Goddess
Gluten-free blueberry flax muffins- totally our new fave.

Seven years ago we left Cape Cod for our gypsy adventure. We sold the sofa, kitchen table, and boxes of cookbooks. We recycled toys and jeans and an old PC. The open road was calling. And we listened.

The western sky hung big and blue above the high desert arroyos of New Mexico. It felt as deep and wide as an ocean. We thought this signaled home. But I missed the sea more than I ever could have guessed. So we moved to Los Angeles and tried on four different neighborhoods in as many years. I grew adept at packing and shedding and shelved my books by color. I luxuriated in each and every hour spent with my two grown sons. A gift, each shared coffee date. Movie night. Christmas dinner.

But Los Angeles was never my home. Its culture felt as walled off to me as the adobe and iron gates in Santa Fe. I felt invisible. And irrelevant. And undernourished. My feminine soul was starving.

And so I turned my gaze East again. It somehow felt right. And I found us a temporary nest, an antique barn studio in a post card worthy Connecticut village where I had lived as a child. Here, I paint. I write. I bake blueberry muffins. I listen to rivers curving through woods. I inhale the fog. It smells like pine. It is quiet here. And the pace is more to my liking.

But it is not by the sea. I cannot walk the flats at low tide. I have no place to hang sheets in the ocean breeze.

The Cape is calling.

Like the long and winding road that tugged me West, the tidal rhythms of living on the Cape are infusing my dreams with the colors of sea glass and bayside creeks. There is sand in my boots from our trip last week and I cannot bring myself to shake it out.

If you are a fortune teller, adept at reading signs, speak now or forever hold your peace.
